These delicious grilled mushrooms make a great breakfast but can also be used as a snack, appetizer, lunch or side dish. If you’re avoiding ham, try substituting a lean ground beef patty, steak or pork loin.
- 1/2 cup mushrooms
- 1 tomato (optional)
- 4 slices uncured ham
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
Heat a large frying pan over medium heat. Grease very lightly.
Wash the mushrooms, slice and sprinkle 1/4 teaspoon of black pepper over the open slots on the bottom of the mushrooms. Sprinkle the garlic powder over the mushrooms and place on the hot pan. Grill with the bottom facing up for 4 minutes, flip, and grill for an additional 4 minutes, depending upon the size of the mushrooms, you may have to grill for an additional 1–2 minutes per side.
Slice the tomato in half and sprinkle the open side with the remaining black pepper. Place on the stove and grill for 3 minutes with the bottom down (do not move during this period). Flip over and grill for an additional 3 minutes.
Add ham to the frying pan and cook until browned and heated through (the fresh ham may need more cooking time than traditional cured ham). Serve hot and enjoy.
